Abstract

Apples are one of the products that are massively produced in our country. Today, apple separation is based on color and size in different countries, but their failure and grading are determined by expert human resources, which requires a lot of time and money. Hence, in this research, the relationship between the chemical and mechanical properties of the Golden Delicious Golden Apple fruit juice with its color properties is examined to obtain a non-destructive estimate of the basic parameters of the product. To achieve the color properties of apples, color matching and MATLAB software were used. The results showed that by accepting the error percentage, the color components of apple fruit can be used to estimate its chemical and mechanical parameters. The most correlation coefficient in the results was related to the estimation of the PH content with the red component, the total sugar content with the red component and the dry matter content and the amount of fracture force with the green component. Also, the results showed that the blue component cannot be used to estimate the chemical and mechanical properties of the measured.
