Abstract

Determination of various properties of apple production in the country is essential for use in designing different machines and improving processing lines in order to reduce waste and increase quality. Iran, with a production of 2 million tons of apples, is considered as the seventh largest producer in the world, although exports of this product are as low as 0.9 million tons.. The purpose of this research is to determine some of the physical, mechanical and chemical properties of apple fruit of the Golden Devils. The results showed that the values for axial dimensions including large diameter, medium diameter and small diameter and geometric mean diameter, spherical coefficient, mass and volume were 59.93 ± 2.58 mm, 59.24 ± 2.66 mm, 2.68, 55.15 ± 2.02 mm, 0.93 ± 0.02, 97.56 ± 10.65 g and 141.44 ± 2.01 cc respectively. Also, the values for chemical parameters of apple product including PH, sugar and dry matter content were 4.9 ± 0.3, 12.55 ± 2. 23.22 % and 15.62 ± 2.72 %, respectively. The values for the mechanical parameters measured and calculated for apple fruit were 365.76 ± 83.58 N, 11.67 ± 1.93 mm and 2462.98 ± 718.41mJ for the maximum force, the maximum displacement and breakdown energy was achieved.
